Sarah Mainguy, Top Chef 2021 finalist, announces her restaurant ephemeral in the heart of Paris, in the 10th arrondissement. The young 26-year-old chef, trained at the Ferrandi Paris school, and passed through the Parisian restaurants Holybelly, Season and Mary Céleste, have since created their restaurant Vacarme in Nantes. It's with joy that she returns to the capital to discover her vegetable cuisine throughout the beautiful season. Nestled in the large garden courtyard of the Le Grand Quartier, Le Grand Vacarme will welcome us from June 24, in a decor created by the studio Uchronia.

inspired by the bistro, grandmother's recipes and street food.

Vegetable cuisine
and natural

Sarah Mainguy revisits these inspirations through the prism of vegetable cuisine and natural, around local sourcing. It is this creative cuisine, which favors the picking, aromatic plants, fermentation and the harmony of products that Sarah Mainguy wishes to offer Le Grand Vacarme with a menu of cheerful small plates and greedy.

The Top Chef finalist also wanted us to taste the dishes that stood out this year in the competition with in particular "the leeks millefeuilles, anchovy and goat's milk "or its incredible dessert" tomato candy cherry, tomato marmalade, and fresh verbena ”. To discover also, compositions very naughty new products such as "schnitzel, gooseberry sauce and mayo tarragon ”or“ black pudding and sriracha puff pastry ”.

And to delight our brunches summer Sarah Mainguy will unveil her "Buckwheat waffle bone marrow, apricot ice cream, sea ​​urchin caramel ”or his“ buckwheat melba and elderberry pancakes ”.
